And I wasn't trying to be a dick about that by the way I really do wish there were stores local where I could check out some kitchen knives lol I was taking a look at the Victorinox Fibrox and their 8" Chef model seemed like a pretty good entry level 80% knife.. I second karnaknives' suggestion to get a Tojiro DP (VG10 steel) knife or knife set, with some caveats.If you have never used before quality kitchen knives, there are two major things you should expect to learn when you upgrade:. Of course, you can always buy more expensive Japanese knives with ever increasing quality of edge thinness/sharpness, edge holding, fit & finish etc., but from simply functional point of view an average home cook's needs are more than well covered with either one of the above 3 knives.

If you like your hunting knife with a gut hook, this is a great knife for you.. Comes with a hard plastic sheath that has a built in sharpener .. That said, if you plan on skinning game you’ll want to have a good hollow grind blade on hand (and a sharpener).. Just as there are different blade grinds there are different blade shapes.. The drop point – This is the most common blade shape for hunting knives.. That pointed tip along with the large belly and relatively long blade make the drop point a good all purpose hunting/camping knife.. And don’t make the most common mistake people make with hunting knives and just assume that longer is better.. First, what will the knife be used for?. For a quality knife, find one with a full tang blade.. Leather sheaths are a premium sheath and typically are high quality and hold up well, but they have their drawbacks as well.. When choosing a hunting knife, look for a knife with high quality materials, a hardness rating appropriate for the job at hand, a blade type that suits your preferences, and one that comes with a great sheath to protect your knife.

Consequently, modern hunting knives are available in numerous different blade shapes, blade lengths, and blade materials which is good for us because certain types of hunting knives tend to be better suited for particular purposes than others.. Consequently, the three most popular hunting knife blade shapes are: the Clip Point , the Drop Point , and the Trailing Point and each design has its strengths and weaknesses.. That said, because the tip of the blade on a Trailing Point is positioned above the spine, you tend to have slightly less control over it than you do with a Clip Point or a Drop Point blade shape.. However, because of the harder steel, Globals are more difficult to sharpen; you can really mess up a Global knife by sharpening it yourself, or taking it to the local knife sharpener.. Messermeister’s German-style knives feel heavier and more substantial than Japanese-style knives.. This knife line is named after the late Al Mar, a well-known player in the high-end knife industry for many years.

Whether you’re a pro chef or a home cook just starting out, you can never underestimate the power of knowing how to put good quality, sharp knives to good use.. There are different ways to hold different types of knives but again, the key is to find the knife that feels most comfortable in your hand to efficiently and safely get cutting.. It’s incredibly important to make sure you have a nice stable chopping board before you start using any knife.. The best body position is to stand straight on to the cutting board and when you’re not using your knife leave it at the top of the chopping board with the blade facing away from you.. That being said, it’s important to know how to sharpen your knives and keep them safe to use.. Attempting to sharpen a blade when it’s not necessary could actually ruin the blade.. When it comes to sharpening tools, I love the diamond stone.. It’s a really good sharpening tool – but it’s not for every knife.. Put the stone in some water for 10 minutes.. Knives that are put through a dishwasher quickly lose the sharpness of their blade.. An expensive knife doesn’t make a chef.. It’s a really high-quality knife that’s easy to sharpen, clean and maintain.
